  • BRRRRRR....

    Its cold and raining here. Needed something to warm me up and tortellini soup was the easiest thing to make. When I cook for others, I cook from scratch. Tonight though, I cheated. I didn't get home from work until 7 pm and I didn't want to be having dinner at 10 pm.

    Its a very simple soup to throw together.

    Saute an onion, pepper and some mushrooms in a little olive oil and garlic
    Add a diced tomato or two...or use a canned
    Toss in a handful of spinach and cook until the spinach cooks down
    Add about 8 cups of veggie broth...make your own or use a good packaged one
    Add in a cup of white wine
    Bring to a boil. Add a package of tortellini ( I used a vegan brand) or any other pasta and cook until the pasta is tender.
    Season to taste with Italian seasoning, salt, pepper and a dash of red pepper flakes and either anise seed or fennel.

    If you like cheese, you can serve this with a little parm cheese sprinkled on top and a crusty bread.
